sucrose
Organic compound, colorless, sweet-tasting crystals that dissolve in water. Sucrose (C12H22O11) is a disaccharide; hydrolysis, by the enzyme invertase, yields "invert sugar" (so called because the hydrolysis results in an inversion of the rotation of plane polarized light), a 50:50 mixture of fructose and glucose, its two constituent monosaccharides. Sucrose occurs naturally in sugarcane, sugar beets, sugar-maple sap, dates, and honey. It is produced commercially in large amounts (especially from sugarcane and sugar beets) and is used almost entirely as food.


Sudra
Fourth and lowest of the varnas, or social classes, of Hindu India. Traditionally composed of artisans and laborers, it probably originally included all conquered peoples of the Indus civilization as they were assimilated into the caste system. Members are not permitted to participate in the upanayana, and thus cannot study the Vedas. The high end of the Sudra includes some landowners; at the low end are untouchables. Suvorov
Russian army commander. Joining the army at 15, he became an officer in 1754 and served in the Seven Years' War. He wrote a battle-training manual that helped Russia win the Russo-Polish conflict of 1768-72 and a conflict with the Turks in 1773-74. He led the army in the Russo-Turkish War and was created a count. After crushing a revolt in Poland in 1794, he was promoted to field marshal. He commanded a Russo-Austrian force in Italy in 1799 and captured Milan, expelling most of the French army from Italy. Ordered to relieve a Russian force in Switzerland, he marched across the Alps; surrounded by a larger French force, he succeeded in breaking out and, repulsing the pursuing French, escaped with most of his army, a remarkable feat.
